Blackened Chicken Salad
1. 3 cups chopped tomato
2. ? cup diced yellow bell pepper
3. ? cup finely chopped red onion
4. 1 Tablespoon sugar
5. 3 Tablespoons cider vinegar
6. ? tsp salt
7. 1/8 tsp pepper
8. ? cup lemon juice
9. ? cup Dijon mustard
10. 3 Tablespoons water
11. 1 Tablespoon honey
12. 4 4ounce skinned boneless chicken breasts
13. 3 Tablespoons Spicy seasoning**
14. Vegetable cooking spray
15. 1 pound sugar snap peas, trimmed
16. 8 cups torn Romaine lettuce
Combine 1st 7 ingredients, cover and chill
Combine ingredients 8-11, stir well, cover and chill
Rub chicken with Spicy seasoning. Coat a large non-stick skillet with vegetable spray, and heat over med-high heat until hot. Add chicken and cook 7 minutes per side or until chicken is done. Remove from skillet and let cool, cut across grain into thin slices and set aside.
Steam snap peas, covered, for 2 minutes. Rinse under cold water and drain. Add snap peas and lettuce to the lemon juice mixture and toss well. Divide the lettuce mixture evenly among 4 large salad bowls and top each with 1 cup of the tomato mixture and 1 chicken breast.
** Spicy seasoning may be a purchased, such as Paul Prudhomme’s or McCormick’s, but they are very high in salt. Here is a recipe to make your own if you choose:
Cajun Seasoning/Rub
(Cooking Light: lower in salt than commercial products)
2 ? tsp paprika
2 tsp garlic powder
1 tsp salt
1 tsp onion powder
1 tsp crushed thyme
1 tsp ground red pepper
1 tsp black pepper
Mix all together, use as a rub on chicken, steaks, seafood, anything calling for a spicy rub.

Marinade....
2 Tablespoons Soy Sauce
1 Tablespoon Sherry
2 cloves Garlic, Minced
2 teaspoons Brown Sugar
1 whole Rib-eye, Strip, Or Sirloin Steak
2 Tablespoons Olive Oil
Salad Dressing.....
2 Tablespoons Olive Oil
2 Tablespoons Soy Sauce
2 Tablespoons White Sugar
1 Tablespoon Lime Juice
2 cloves Garlic, Finely Diced
1 Tablespoon Fresh Ginger, Minced
? whole Jalapeno, Seeded And Diced
Salad.....
2 whole Green Onions
Your choice of greens..Romain...Spinach etc
Combine steak marinade ingredients in a Ziploc bag. Mix and place steak into bag. Marinate for 30 minutes to 2 hours.
Combine salad dressing ingredients and slice green onion.
When steak is finished marinating, add 2 tablespoons olive oil to a hot skillet. Cook steak about 1 1/2 minutes per side, or until medium rare. Remove from skillet and keep on a plate, allowing to cool slightly.
Toss salad greens in 3/4 of the salad dressing. Place steak on cutting board and slice thinly, then pour juices from the plate over the top. Mound tossed salad on a platter, then place sliced steak on top of salad. Pour remaining salad dressing over the top. Sprinkle green onions over the salad, and add cherry tomatoes if you like for color.............

Cobb salad - romaine lettuce,spinach, shredded carrot, green and red peppers, sliced hard boiled eggs, chopped walnuts, avocado, tomato, sliced chicken, crumbled bacon, grated cheddar.
Summer salad - baby spinach leaves, sliced strawberries OR mandarin oranges, crumbled goats cheese, sliced almonds or toasted pine nuts, poppyseed dressing
Greek salad - romaine lettuce, cucumber, tomato, olives, crumbled feta cheese, slice onions
fresh Mexican salad - cooked corn kernels, red beans, cilantro, salt and pepper, jalapeno, red peppers, celery, tomato, avacado. dollop of sour cream :)
mango salad - mango, red onion, carrot, tomato, balsamic vinegar, salt and pepper, cilantro
asian slaw: combine one package cole slaw mix with enough sesame asian dressing (Kraft or Mrs. Cubbison's are good) to fully moisten, chill at least an hour. before serving, add some crunchy chow mein noodles, craisins, sesame seeds or peanuts (or soy nuts... mmmm), and wasabi peas. toss and serve.
southwestern fajita salad: toss together your favorite lettuce blend, some spicy ranch or chipotle dressing, grated cheddar-jack cheese, drained canned corn (or leftover roasted corn), drained and rinsed black beans, cubed avocado, chopped fajita chicken or beef, and crushed tortilla chips or tortilla strips (found with he croutons in the store). mmmmm it's a whole meal!
buffalo chicken salad: toss together your favorite lettuce blend, some ranch or bleu cheese dressing, cubed pieces of cooked chicken tossed in buffalo wing sauce, and add some veggies (we like julienned carrots and celery), and croutons if you want.
killer side salad: toss together your favorite lettuce blend, any tangy dressing (ranch, zesty italian, chipotle), shredded carrot, sliced radishes, sliced strawberries, sliced apples, thinly sliced red onion, grated or crumbled cheese (we like pecorino romano, parmesan, cheddar, blue cheese, or pepper jack), and croutons. serve. yummmmm.
lettuce, baby tomatoes, okra, shredded carrots, 2 boiled eggs or 4, wrapped boiled ham, or capricola ham, wrapped salami, wrapped, american cheese, and wrapped, swiss cheese, fleet broccoli spears, mushrooms and, sliced green pepper, and sliced purple onions, bacon bits, and salad dressing, make all this up in a large soup bowl, serve with crackers, have this on a hot summer day for dinner, put the onions and green pepper on top, put the meets around the lettuce, and eggs in the center, top with bacon for the final touch
First make simple vinigerate with olive oil, salt and lemon juice.
Tear some iceberg with ur hands, cut british or seed less cucumber into bite size pieces, chop one med red onions, cherry tomatoes into half even, normal tomatoes willbe fine, some baby carrots sliced, if ur non veg person than leftover chk or any sea food will be just fine. Mix well adding ur freshly made vinigerate. U ll just love it u can also add some cheese if u have any. Enjoy
Umm well you can put anything you like in a salad really, it just depends on what you have in the cupboard lol :)
The other day I made one with the usual lettuce, tomato, cucumber, onions and peppers, and I added some dry roasted peanuts which was yummy :D
