Rice - a - Roni has a Spanish rice to which you only add a can of tomatoes and water, Other than that, here is a great recipe my son and I enjoyed just couple weeks ago.
Spanish Rice
Ingredients
? 2 tablespoons vegetable oil
? 1 cup uncooked white rice
? 1 onion, chopped
? 1/2 green bell pepper, chopped
? 2 cups water
? 1 (10 ounce) can diced tomatoes and green chilis
? 2 teaspoons chili powder, or to taste
? 1 teaspoon salt
Directions
1. Heat oil in a deep skillet over medium heat. Saute rice, onion, and bell pepper until rice is browned and onions are tender.
2. Stir in water and tomatoes. Season with chili powder and salt. Cover, and simmer for 30 minutes, or until rice is cooked and liquid is absorbed.
Place 2 tbsp of oil into heavy pot.
Optionally add a chopped onion & diced Bell pepper.
If using regular rice, measure 1 cup into pot.
Heat over medium burner, until rice golden, onions soft.
Add 2 cups of tomato juice, bring to a boil,
cover & reduce heat, simmer 40 minutes.
Add a can of stewed tomatoes, heat & serve.
