I have a recipe of soft cookies, may it can help you
Ingredients
1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 1/2 teaspoons ground cinnamon
3 cups quick cooking oats
Directions
In a medium bowl, cream together butter, white sugar, and brown sugar. Beat in eggs one at a time and then stir in vanilla. Combine flour, baking soda, salt, and cinnamon; stir into the creamed mixture. Mix up in oats. Cover, and chill dough for at least one hour.
Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets. Roll the dough into walnut sized balls, and place 2 inches apart on cookie sheets. Compress each cookie with a large fork dipped in sugar.
Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transfer to a wire rack to fresh completely.
Hi there!
You can use any recipes that you have been using for "hard" cookies including box mixes. The trick is to remove the cookies from the oven at a shorter time. So you got to refer to your recipe. If it calls for a 30 minute bake, check cookies at 20mins. If it's not gooey (batter form) then take the tray out from the oven and you'll have your soft cookies. It also helps to leave the cookies on a cooling tray slightly longer than usual before placing them into the jar.
Please don't give up! Baking is therapeutic!=)
I know how you feel, it gets really frustrating when our bakes don't turn out the way we wanted them to be but it takes lots and lots of practice to get it right and even so, it might just fall short on some days!;p
Good luck dear!*^_^*
I'm a bakie and I bake all the time..=)
Give them a couple of minutes less time in the oven. When you take them out of the oven to cool, cookies lose additional moisture, and get harder. So what seems perfect right out of the oven is going to be harder 2 hours later.
Use shortening instead of butter.
Underbake them, when they aren't golden brown yet and when they cool off they should be soft
