If a recipe says to put something in a 400 degree oven for 6 minutes?!

You don't want to cook lamb chops like that in a 500 degree oven. The muscle in the meat will seize and buckle and make the meat tough. At 400 degrees it won't seize. Doing it at 500 is the same as frying it in a skillet and will seize (like a charlie horse in your leg - tighten right up).

Do what the ingredient says, because then if you do it much more in less mintues the whole thing could burn or the outside will be burned and the inside will still be raw.

I would suggest do at lower degree for longer time. It will taste good.
