If I'm adding grilled chicken breasts to fettucini alfredo, how much garlic should I use and what herbs?!
Answers:
A really good way of doing this would to be infuse some oil (olive oil preferably) with 2 cloves of garlic, and use the infused oil to help marinate the chicken with the herbs.
Depending on how much chicken you have, I'd use 1/2-3/4 of a cup of oil, put two cloves of garlic in there - with the skins off - and leave it to infuse for 2 hours or so.
In a bowl, place the chicken with the herbs (oregano, thyme, and a little rosemary. if you dont have all of these, if you have Italian mixed herbs, use some of that instead, judging how much you would need for the amount of chicken you have. also, a squeeze of lemon juice would go nicely as well). Once thats in the bowl with the chicken, get the infused garlic oil and pour some over the chicken - not a whole lot, just enough to make the chicken moist and to cover it all fairly well. Let it sit in the fridge for 30-60mins to marinade. You can also use the galric infused oil to cook with too as this will add extra flavour.
Hope this has helped! If you do use this method, it works really well, i've done it many times before!
I would say add about 1 tablepoon of mince garlic. I would add some parsley, oregano, basil, and lemon. rub that in the chicken and grill. as for the vegetables I would use saute carrots or peas. Broccoli with some garlic butter will work as well.
Good luck, and remember you dont have to follow a recipe, make it you own using your taste prefrences!
