need help with sauce recipes?!
Answers:
I know Hollandaise goes very well with asparagus and the lemony taste would go very well with the salmon as well since it has a bit of lemon in it. You can find many recipes online, and it is deceptively simple to make as long as you can follow instructions.
DILL SAUCE:
1 tablespoon finely chopped onion
2 tablespoons butter or margarine
2 tablespoons all-purpose flour
1 teaspoon dill weed
1/2 teaspoon salt
1/8 teaspoon pepper
1 1/2 cups milk (I only use ? cup)
In a saucepan over medium heat, saute onion in butter until tender. Stir in
flour, dill, salt and pepper until blended; gradually add milk. Bring to a boil;
cook and stir for 2 minutes or until thickened.
Cucumber sauce
3/4 cup sour cream
1 tablespoon finely minced green onion, tops only
1/2 cup grated cucumber
1 teaspoon salt
1 tablespoon fresh lemon juice
dash ground cayenne pepper
Combine all ingredients; chill.
Tarragon bearnaise. Compliments both the asparagus and the salmon and you should get some credit for the difficulty of the sauce itself.

If you want something non-European and less fatty, try sesame terriyaki.Beurre blanc or champagne sauce would go well with both, and not mask the natural flavor.
I agree with the two previous posters, that a Bearnaise or hollandaise derivative would work perfectly. Classic accompaniment.

Hollandaise sounds good. Could go for something different and try a peppercorn sauce, up to you budding chef! Be creative!
