This is one of me and the kids favorites.

Pizza Potatoes

1 pkg. Betty Crocker scalloped potatoes
1 can (16 oz.) tomatoes
1 1/2 c. water
1/4 t. oregano leaves
1 pkg. (4 oz.) sliced pepperoni
1 pkg. (4 oz.) shredded Mozzarella cheese

Heat oven to 400 F. Empty potato slices and packet of seasoned sauce mix (in potato box) into ungreased 2 qt. casserole dish. In a sauce pan, heat tomatoes, water and oregano to boiling. Stir into casserole dish. Arrange pepperoni slices on top and sprinkle with cheese. Bake uncovered 35-45 mins. Serves 4.

Slow Cooker Chicken Fajitas

1 lb. boneless, skinless chicken breasts, cut into strips
1 small onion, sliced
1/2 each red and green bell pepper, cut into strips
juice of 2 limes
1/2 t. oregano
1/2 t. chili powder
1/2 t. ground cumin
1/2 t. coarsely ground black pepper
2 cloves garlic, minced
4-6 flour tortillas (8”), warmed
1 tomato, chopped
sour cream

Place onion in stoneware. Combine lime juice with seasonings in small bowl. Add chicken and toss well to coat. Pour chicken and juice mix over onion. Cover and cook 6-8 hrs. stir in green and red pepper strips during last 30 mins. of cooking. To serve: spoon chicken and onion into center of each tortilla. Top with tomato and sour cream. Fold sides of tortilla toward center.



Chavrie & Basil Pizza Bites

Ingredients And Procedures
1 cn CHAVRIE goat cheese (5.3 oz)

2 Garlic cloves, minced

1/2 t Dried oregano leaves,

-crushed 1/4 t Fresh ground pepper

1 sm French bread loaf

2 Plum tomatoes, thinly sliced

Olive oil 1/2 c Shredded fresh basil leaves

Preheat oven to 400'F. Combine Chavrie, garlic, oregano and pepper. Mix well. Cut French bread into 12 slices. Top each slice with slice of tomato and brush with olive oil. Place 1 teaspoon of cheese mixture on top of each tomato slice; bake 8-10 minutes or until bread is toasted. Remove from oven and top with shredded basil.
