xanthan gum for cooking gluten free?!


Question: Xanthan gum for cooking gluten free?
I buy gluten free flour that has xanthan gum already in it. Do I heed to put additonal xanthan gum into my recipes?

Answers:

No as the gum is the bind, it acts like the gluten in wheat flour, I actually buy a wheat based gluten free flour here in Canada, you can add a rice flour to it for add protein, but the xanthan gum is proportioned to make it ready to use.
