What frosting flavor should I use?!


Question: What frosting flavor should I use?
I am making pineapple cupcakes, which are basically vanilla but with buttermilk and crushed pineapple. I prefer cream cheese frosting vs buttercream, but what flavor should I add? What color would be cool?

Answers:

I'd suggest making the cream cheese frosting and adding 1/2 teaspoon of vanilla and 1-2 teaspoons of rum. If you'd rather not use alcohol, you can use 1/2 teaspoon of rum extract. These quantities are only approximations, it all depends on the quantity of frosting you are making so adjust to taste. I would also toast a bit of coconut and once iced, sprinkle the top of the cupcakes with the coconut. Good Luck and I hope this helps.

Cherry Frosting!

FROSTING INGREDIENTS:
1 pkg cream cheese (8 oz), softened
1/2 c butter, softened
2 c powdered sugar
1 jar(s) maraschino cherries

To make frosting:

1- cream the butter and cream cheese. Slowly add powdered sugar until you get the desired consistency.

2- A little at a time, mix in juice from maraschino cherries until bright pink color and a good cherry flavor are achieved. You will probably have to add more powdered sugar to maintain desired consistency.

3-After cupcakes are cooled, frost or pipe frosting onto cupcakes. Cut the cherries in half and place on top for an accent.

I'd stick with the cream cheese frosting and either keep it white or tint it a very pale yellow.
