Ingredients

* 2 cups all-purpose flour
* 1 teaspoon baking soda
* 1/4 teaspoon salt
* 1/2 cup butter
* 3/4 cup brown sugar
* 2 eggs, beaten
* 2 1/3 cups mashed overripe bananas


Directions

1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
2. In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
3. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

and you can add anything you want to be creative. i like to add chocolate chips or nuts

first you will need very ripe bananas preferably with some black on the skin (this makes them sweeter and more flavorsome )

2/3 very ripe bananas
2oz hazelnuts or nibbed peanuts
8oz self raising flour
8oz butter (unsalted)
4 medium sized eggs
4oz castor sugar
4oz muscavado sugar
4oz 60/80% chocolate
vanilla essence

method

1/ cream butter and both sugars till very smooth
2/ add eggs 1 at a time and beat in
add Vanilla a few drops essence NOT flavour
3/ fold in the flour
4/peel the bananas and break into pieces
5/ roast the nuts in a dry pan and if whole blitz in a food processor
6/ chop the chocolate into pieces do not melt
7/ fold banana nuts and chocolate together note the word FOLD
8/ tip into greased lined loaf tin
9/ bake 175c for 45 min then test with thin knife
10/ eat hot or cold wit your favorite cream
