I'm making a coffee cake that uses a Bisquick type cake for it base that is usually dry after baking.?!

I have always thought that the coffee cakes and some of the other recipes using Bisquick type mix are often very dry. I have pretty much stopped using them for that reason.
But you might want to try adding yogurt or sour cream rather than water to the recipe. If you have neither use milk. The added dairy may give a little more moisture. Adding some diced apple, peaches or other fruit will make it moister as well.
I think the coffee cakes using a cake mix turn out much better if you are going to use a mix.
I start with a yellow cake mix then make a streusel type topping. I put some of the topping in the bottom of a well greased bundt pan then add some of the cake batter then more of the streusel then the rest of the batter.
Adding some apples to the batter give a great flavor.

Cinnamon Brunch Cake
1/2 Cup packed brown sugar
2 tsp cinnamon
3/4 Cup finely chopped almonds
1 package white cake mix
1 package (4 serving size) vanilla instant pudding mix
4 eggs
3/4 Cup vegetable oil
3/4 Cup water
1 tsp almond extract
Pre heat oven 350 degrees F. (180 C)
Grease a 10 inch Bundt pan
Combine brown sugar and cinnamon, set aside for filling. Sprinkle almonds evenly in the bottom of the pan.
In a large mixer bowl combine cake mix, pudding mix, eggs, oil, water and almond extract. Beat on medium speed for 2 minutes. Spread 1/3 of the batter over the nuts in the pan. Sprinkle half the cinnamon sugar mixture over the batter, spread another 1/3 batter on top, sprinkle with the rest of the sugar mixture then the rest of the batter.
Bake for 45 to 55 minutes or until cake tester comes out clean.
Cool for 25 minutes in pan on wire rack, then remove cake.
Glaze
1 Cup powdered sugar
1/2 tsp vanilla
1 to 2 Tb milk.
Combine and stir until smooth.
Drizzle glaze over cooled cake.
You can use any type of nut you like if you use pecans or walnuts replace almond extract with vanilla extract.
Does the recipe call for oil? If it does, substitute mayo or applesauce for the oil and it should come out more moist.
