What should I cook for my boyfriend?!

Question: What should I cook for my boyfriend?
We haven't seen each other in 3 weeks so I want to cook him dinner.

I want it to be a chicken dish, and I want to serve it with brown rice or whole-wheat pasta. I'm willing to buy anything else I'd need for your recommended recipe (as long as its easy to find and not too expensive).

IDEAS?

Answers:

Here is one that is inexpensive and easy. I do like your suggestion though.

Slow Cooker Adobo Chicken

1 small sweet onion, sliced
8 cloves garlic, crushed
3/4 cup soy sauce
1/2 cup vinegar
1 (3 lb.) whole chicken, cut into pieces

Place chicken in a slow cooker. In a small bowl mix the onion, garlic, soy sauce, and vinegar, and pour over the chicken. Cook on Low for 6-8 hrs. Serve hot with steamed rice. Makes 4 servings.

Why not fix him Cornish Game Hens stuffed with nutted wild and brown rice pilaf mushrooms and a sherry pan glaze over the top.
This is super easy. Stuff the hens bake at 350 for 2 hrs or until 165 degrees in the center. Stuffing-equal parts brown and wild rice cook till done add chopped onions celery carrots mushrooms a bit of sage some white wine/butter and a hand full of chopped pecans stir together and stuff the hens. In baking pan put some butter pats on top of the hens add salt and pepper and some chicken stock and sherry or white wine as a glaze and drizzle over the birds as they bake uncovered.
This is always a hit with friends I serve on special occasions.

How about Chicken Parmesan?
Dip 6 chicken cutlets or 10 tenders in 1 egg beaten with 2 tbsp milk, then bread in 1 c panko breadcrumbs mixed with 1 c grated parmesan and 1 tsp Italian seasoning. Then bake on a lightly greased cookie sheet at 425 for 6-8 minutes (for tenders) or 8-11 minutes (for cutlets). Meanwhile, heat a jar of your favorite marinra sauce just til simmering. Once chicken is cooked, layer in a 9x13 pan: 1 c sauce spread venly over the bottom, the chicken, 1 c more sauce spooned over the top, then sprinkle 2/3 c grated mozzarella and 1/3 c parmesan over top. Bake to melt cheese. Toss 3 c whole wheat rotini with any remaining sauce you've heated, then top with chicken and additional sauce if desired. mmmmm

roll the chicken breast around a piece of mozzarella cheese and tomato. add some spices (garlic, basil, etc)
