Yes, the amount of meat will change the cooking time. The amount of time also depends on the setting you use. In a regular oven at 350 degrees you figure 20-25 minutes per pound of meat. It takes 3-4 times that for a slow cooker. With ribs, some of it is bone, so there's less meat than 2 1/2 lbs. I would be figuring 3-4 hours. If it falls off the bones, it is definitely done and tender! I can't find my slow cooker cookbook, but you could probably find it online.
