What should i cook/bake my mum for mothers day?!


Question: What should i cook/bake my mum for mothers day?
Meat wise she only likes ground beef, bacon, and ham.
she will eat any vegetable.
she especially likes lemon.. and coconut. oh, and chocolate.
all ideas and recipes are appreciated

Bake a honey ham for her serve it with baked beans with bacon, add a roll and Roast some vegetables. And For her desert Glazed lemon-coconut bars with a drizzle of chocolate ontop...here are some recipes to help you out...


OVEN ROASTED VEGETABLES
2 red peppers
1 green bell pepper
2 onions
2 zucchini
8 oz. box mushrooms
6 new potatoes, scrubbed
1 tsp. salt
2 cloves garlic, crushed or pressed
coarsely ground pepper
1/2 tsp. oregano
1/2 tbsp. basil
1/2 tsp rosemary

Wash and dry vegetables. Any combination of vegetables in season may be used.
Cube them into large bite-size pieces. Halve mushrooms, if large. Potatoes can be parboiled (or put in first). Arrange vegetables in a baking dish or roasting pan in a single layer.

Crush the garlic with salt using the side of a large knife until pureed (or use a garlic press). Stir into oil.

Drizzle the vegetables with olive oil and toss to coat well.

Sprinkle with pepper, oregano, basil and rosemary.

Roast in oven at 400°F; reduce heat if vegetables are browning too quickly before they are done. Vegetables may not cook at the same rate. As some of the vegetables cook, they may be removed while the others are left to finish cooking. Add more olive oil if the vegetables absorb the oil and become dry during the cooking (or use olive oil spray).

Can be served hot or room temperature.




Glazed Lemon-Coconut Bars

Bars
1 cup Bisquick Heart Smart? mix
2 tablespoons powdered sugar
2 tablespoons firm butter **Melt some chocolate and when the bars
3/4 cup granulated sugar are done cooking drizzle the melted chocolate
1/4 cup flaked coconut over them. Delicious!!!!!
1 tablespoon Bisquick Heart Smart? mix
2 teaspoons grated lemon peel
2 tablespoons lemon juice
1/2 cup fat-free egg product

Lemon Glaze
1/2 cup powdered sugar
1 tablespoon lemon juice


#1. Heat oven to 350°F. In small bowl, mix 1 cup Bisquick mix and 2 tablespoons powdered sugar. Cut in butter, using pastry blender (or pulling 2 table knives through mixture in opposite directions), until crumbly. Press in ungreased 8-inch square pan.
#2. Bake uncovered about 10 minutes or until light brown. Meanwhile, in small bowl, mix all remaining bar ingredients. Pour coconut mixture over baked layer.
#3. Bake about 25 minutes longer or until set and golden brown. Loosen edges from sides of pan while warm.
#4. In small bowl, stir lemon glaze ingredients until smooth; spread over bars. Cool completely, about 1 hour. For bars, cut into 4 rows by 4 rows.

Ham & Cheese Pot Pie

1 ham steak (6 oz.), chopped
1 cup 2% Milk Shredded Cheddar Cheese
1 cup frozen broccoli cuts, thawed, drained
1 cup frozen cauliflower florets, thawed, drained
2 green onions chopped
1/2 cup (1/2 8-oz. tub) Chive & Onion cream cheese
1 refrigerated pie crust (1/2 14.1-oz. pkg.)
1 egg
1 T. water

Heat oven to 400 F. Combine first 5 ingredients. Microwave cream cheese spread in microwaveable bowl on HIGH 1 min. or until completely melted, stirring every 15 sec. Add to ham mix; mix well. Spoon into 4 (6 oz.) ramekins. Unroll pie crust on lightly floured surface; roll to 12” circle. Cut into 4 circles with 5” round cookie cutter. Cut leaves from about 1/4 of the trimmings with small cookie cutter or sharp knife; discard remaining trimmings. Beat egg and water until well blended; brush onto top edges of ramekins. Top with pie crust circles; press gently onto top edges of ramekins to seal. Top with leaf cutouts; brush lightly with egg wash. Discard any remaining egg wash. Place ramekins on baking sheet. Cut slits in crusts to vent. Bake 30-32 min. or until golden brown. Serves 4.

Chicken Pot Pie
Prepare as directed, substituting 1-1/4 cups chopped cooked chicken for the ham.
Note: If you don't have a 5” cookie cutter, invert a 5” diameter bowl or clean can onto pastry; trace around edge with small sharp knife. Repeat to cut out the remaining 3 circles.

Substitute
Prepare using KRAFT 2% Milk Shredded Colby & Monterey Jack Cheeses.

Serve with a salad on the side. Make brownies for dessert and top with a scoop of chocolate ice cream and a dollop of whipped cream. Enjoy.

Spaghetti bolognese. And a box of chocolates for after. Like thorntons classic, they have a lemon parfait chocolate and various other yummys, don't think any coconut though. But they are lush.
