Question: What's the best quesadilla ever you've made at home?
Quesadillas are one of my favorite foods. I make them often, but, I'm getting bored with the same ole ingredients.

What are some of yours?

Answers:

The sky is the limit with quesadillas. Sometimes I like to put cooked and halved shrimp in these, or pulled chicken or pork.

Vidalia & chihuahua quesadillas

Sweet Vidalia onions and cheese make the perfect partners for a satisfying snack or quick and easy lunch.

Ingredients
1 tablespoon unsalted butter
1 Vidalia Onion, Sliced
6 Small flour tortillas
1 cup shredded Cheddar cheese, divided
1/3 cup finely diced red pepper
24 cilantro leaves

Method
In a large skillet, melt butter over medium heat, sauté onion until softened. Lay tortillas on work surface; sprinkle half of cheese on half of each tortilla. Divide onions evenly among tortillas; placing over cheese.

Top with red pepper and cilantro. Sprinkle remaining cheese over cilantro leaves. Fold plain half over filling; press down gently. Heat large, lightly greased, non-stick or cast-iron skillet over medium-high heat. Place folded quesadillas in hot pan; cook until golden brown, turn and cook other side. Remove from pan; cut each into 3 triangles.

Serve warm.



Southwest Quesadilla...

Cheese of coarse
chopped chicken breast
fresh corn (or canned/frozen and thawed will do)
drained black beans
cilantro
tomatoes
Chopped green onion

don't add too much of the ingredients, just a little will do fine.

I like dunking my quesadillas in a combination of ranch dressing (Vons/Safeway brand rocks) and tapatio. Yum!

Trader Joes sells very nice whole wheat tortillas. I like to cook them over and open flame with some real Mexican Oaxaca cheese inside. As it melts it releases some butterfat and tastes really buttery. Yum.

I also like to throw some freshly roasted almonds in there. Double yum!

my favourite is Chicken quesadilla

chopped grilled chicken
thinly slice red and yellow pepper
thin slices of red onion
and mozzerella/chedder mix

grilled not fried in oil. served with sour cream and mild salsa (allergic to jalepenos)



I fry my shells in a little hot bacon grease, and you can fill with hot pepper cheese, and shredded beef, or pork..eggs, chicken, or just cheese, and refried beans with hot sauce.



cheese with steak pieces in it and onion and cilantro.
