I marinate them in buttermilk before baking them in the oven. It makes the chops really tender and moist.



I recommend searing them first: put them in a very hot skillet (I use cast iron) with just a little oil for about 1 minute per side. This seals in the juices. Then put them in a baking sheet and bake at 350 for the remainder of the time (time varies depending on thickness). Take them out when they're just barely done, cover with foil or a pan lid and let them rest for 5-10 minutes to 'finish'.

This isn't really a recipe, but it sounded like what you really were looking for was a technique for juicy chops rather than specific flavorings. A simple sprinkle of salt, pepper, garlic powder and onion powder is delicious on these; if you have good quality chops that's really all you need!

Barbecued Pork Chops
Ingredients:
one chopped onion
three quarter cup catsup
one half cup apple cider vinegar
one tsp tabasco
one quarter cup worcestshire sauce
two tblsps wet mustard yellow
one half tsp garlic powder
one cup water
mix
pour over shoulder chops in shallow pan so chops will brown. Bake at 350 until nice and brown.
serve with mashed potatos.
