What's a recipe for something healthy I can bake?!

I like to make butternut squash soup. Poke some vents into a large butternut squash. Put it on a baking sheet along with a few cloves of garlic. Pour some olive oil onto the garlic cloves. Bake at 350 degrees for about an hour or until the squash is soft. Scoop the squash and pinch the garlic into a stock pot, and add a large can of chicken stock and blend with a hand blender. Salt and pepper to taste. It is so good.

Ingredients:
4 tilapia fillets (6 ounces each)
3 tablespoons butter, melted
3 tablespoons lemon juice
1-1/2 teaspoons garlic powder
1/8 teaspoon salt
2 tablespoons capers, drained
1/2 teaspoon dried oregano
1/8 teaspoon paprika
Directions:
Place tilapia in an ungreased 13-in. x 9-in. baking dish. In a small bowl, combine the butter, lemon juice, garlic powder and salt; pour over the fillets. Sprinkle with capers, oregano and paprika.
Bake, uncovered, at 425° for 10-15 minutes or until fish flakes easily with a fork. Yield: 4 servings.
You can reduce the amount of butter or substitute with margarine, olive oil, butter flavored Pam, etc.
