No need for fancy recipes and ingredients, it's the onion's you want to taste in the soup, hence the name! I've made this onion soup many a time for dinner parties and it's been a huge success so far. Please give it a try, it's very easy as well as tasty!

Ingredients:
1 1/2oz butter
2 tbsp veg oil
1 1/2 Lb onions, peeled, halved and sliced
1/4 tsp sugar (optional)
2 1/2 pints beef stock ( I use two beef oxo cubes)
salt and black pepper

Method:
Heat the butter and the oil in a large, heavy based pan. put in the onions and the sugar, cook over a low heat stirring occasionally for about 15 mins until soft and golden brown. Gradually stir in the stock, season with salt and pepper and bring to the boil. Simmer for 45 mins.

For a thicker soup simmer and reduce to your own required thickness.

French Onion Soup
Serves 4

1 T butter or margarine
2 T canola oil
6 large sweet onions, quartered lengthwise then sliced ? - ? inch across
3 T salt
1 T fresh ground black pepper
1 t sugar
? cup dry vermouth or dry white wine
6 cups beef broth
? t dried thyme
1 t Worcestershire sauce

? pound French Bread (I like to use the whole grain baguette) cut into 1 inch pieces
4 cups shredded Swiss Cheese


Heat butter and oil in a large (5-8 quart) Dutch oven, until butter is melted. Add sliced onions, salt, pepper, and sugar, and sauté over medium heat until onions are browned but not burned, stirring very often (this will take 30 minutes or so).

Add the vermouth and scrape the bottom of the pan to catch all the flavorings that are on there. Then add the beef broth, the dried thyme and the Worcestershire sauce. Simmer for 10-15 minutes.

While the soup is simmering, bake the bread pieces in a 400 degree oven for 10 minutes, making unflavored croutons.

When ready to make the baked soup, divide the soup evenly into 4 baking crocks, top each with a1/4 of the croutons, then 1 cup each of the Swiss cheese. Bake at 350 F for 10 minutes until the cheese is properly melted. Serve each crock on a dinner plate to keep from burning what’s underneath.

6 large red or yellow onions, peeled and thinly sliced.
Olive oil
1/4 teaspoon of sugar
2 cloves garlic, minced
8 cups of beef stock, chicken stock, or a combination of the two (traditionally the soup is made with beef stock)
1/2 cup of dry vermouth or dry white wine
1 bay leaf
1/4 teaspoon of dry thyme
Salt and pepper
8 slices of toasted French bread
1 1/2 cups of grated Swiss Gruyere with a little grated Parmesan cheese
Method
1 In a large saucepan, sauté the onions in the olive oil on medium high heat until well browned, but not burned, about 30-40 minutes (or longer). Add the sugar about 10 minutes into the process to help with the carmelization.

2 Add garlic and sauté for 1 minute. Add the stock, vermouth or wine, bay leaf, and thyme. Cover partially and simmer until the flavors are well blended, about 30 minutes. Season to taste with salt and pepper. Discard the bay leaf.

3 To serve you can either use individual oven-proof soup bowls or one large casserole dish. Ladle the soup into the bowls or casserole dish. Cover with the toast and sprinkle with cheese. Put into the broiler for 10 minutes at 350 degrees F, or until the cheese bubbles and is slightly browned. Serve immediately.

Yield: Serves 4-6.

Finely slice an onion & sauté in oil, sprinkle with sugar to caramelize.
Place in heavy pot with 2 cups of beef bouillon per person.
Bring to a simmer, pour over fried croutons in soup bowl.
Sprinkle with grated mozzarella & cheddar, place under broiler.



First get some chicken broth. Boil it for 5 min. and then add sliced onions and a bit of cheese. Let boil for 15 min. and it's ready!
