Question: I need a good way to cook chicken tonight?
Something very easy please. I found a recipe the said rub on olive oil and sprinkle with thyme, but I don't have any thyme. So I need either a substitute for thyme or a similar very easy recipe.

my easy chicken recipe...chicken (any part) season lightly in a roasting or baking pan and add a can of Campbell's Cream of Mushroom soup bake it until it's done...the sauce will smooth out once cooked....my family loves it!!



You can substitute pretty much any aromatic herb, rosemary, oregano or dill would work nicely.

You could also do a simple lemon garlic chicken, just season the chicken with a bit of S&P, crushed garlic and lemon juice.

I also enjoy making chicken cheese steaks, chop the chicken up (into smallish bits), season with S&P and saute with some onions and/or peppers, the melt on some cheese and serve in a roll (I also love adding greens (spinach, collards or broc raab) to this).

One of the other dishes I like to make is chicken with brown rice, you just brown the pre-segmented chicken (set aside), then saute the veg (onions, carrots, garlic and peppers) add some rice (2 cups-sautee for a minute) add a bit of tomato paste (saute another minute) then add some stock/water (4 cups), return the chicken, bring to a boil ,cover and reduce heat to simmer, cook for about an hour (until rice is tender). Add some frozen peas right at the end (about five minutes before done) and perhaps a squeeze of lemon/lime juice over the top.



I prepared a baked chicken for lunch today. I rubbed it with olive oil and sprinkled it with Lowery's Seasoning. You can use any kind of seasoning you like. I have used Greek herbs, poultry rub, Italian seasoning and oregano in the past. They are all good. See what you have in your pantry and experiment. I baked the chicken at 375 degrees for one hour and 15 minutes. It was perfect!



Pink said to lightly season, you don't need to preseason. the cream of mushroom soup will take care of it ! I cook for a group of 30 people every day and they love their chicken prepared this way ! The soup makes a very good gravy for your potatoes too !

Wash it well, stick some celery and an onion in the cavity, rub with olive oil, salt, pepper, or any other seasoning you like and bake it until it is nice and brown.

Just use salt and pepper. Or lemon juice. Or oregano. Some other spice that might be good with chicken.
