Question: What can I use Roasted Red Peppers for besides in soup and dip?
I'm looking for a recipe to put them in other than sandwiches.

This is my favorite lasagna recipe! You could also put roasted red peppers on a homemade pizza or in a pasta salad or a green salad.


*Roasted Red Pepper and Spinach Lasagna*

9 dry lasagna noodles
4 cups tomato sauce
10 ounces fresh spinach (or frozen spinach, thawed, squeezed dry)
1 8-ounce jar of roasted red peppers, chopped
4 ounces cream cheese
1? cups (3/4 lb.) ricotta cheese
? cup Parmesan cheese, freshly grated
1 egg
Salt & pepper
8 ounces (2 cups) shredded mozzarella cheese

Preheat oven to 350 °F. Spray a 9x13 pan with cooking spray. Set aside.

Bring an 8-quart pot of water to boil. Add the lasagna noodles one at a time and cook for 5 minutes. Drain the noodles and rinse in cold water. Set aside.

Remove the stems and wash spinach thoroughly. Add spinach and a bit of water to a pot, bring to boil and cook until tender, about 3-5 minutes. Be careful not to burn the spinach. Drain, cool, and squeeze out excess moisture.

Using a fork beat the cream cheese until smooth, then mix with ricotta, 1/2 cup grated Parmesan cheese, and egg until will blended. Season with salt and pepper.

To assemble, spread a little tomato sauce on the bottom of the prepared 9x13 pan. Cover with 3 cooked noodles. Spread more sauce on top and add some blobs of the cheese mix. Sprinkle some spinach, roasted peppers, and mozzarella on top. Add another 3 noodles and press down slightly. Repeat the process by adding sauce, cheese mix, spinach, peppers, and mozzarella. Finish off by adding last 3 noodles, sauce, remaining Parmesan cheese, and the rest of the mozzarella.

Bake uncovered in the preheated oven for 25 minutes. Add a layer of aluminum foil and bake another 10 minutes. Remove lasagna from oven and let stand for 10 minutes before serving.



My husband had the BEST turkey burger in Santa Barbara, CA last year. It had grilled onion, a roasted red pepper, lettuce and some kind of spicy mayo and it was to DIE for.

Also, I like to slice them thin and put them on my frozen cheese pizza with onions.



They are delicious on crackers with cream cheese, on salads, or pizza. However, my very favorite is toasting french bread in a pan of olive oil and spreading a crab-cream cheese dip over it, then having roasted red pepper on top. It is SOOO good!

It'll give you a tone of recipes, but most are as sides to a main course



Also great in scrambled eggs, tuna noodle casserole, stews.



I use them in pasta (im italian) I add avacoados, pesto sauce and top any pasta



Serve with steak or sausage
