How can i make good french fries?!


Question: How can i make good french fries?
I made some today they were pretty good but they werent quite as good as dennys fries or mcdonalds fries. How can i make them good like them?
Also it took a while to make the fries because i didnt know how many i can put in the pan without ruining them. If i want to put 4 potatoes worth of french fries in the pan to cook will they come out good and how do i make them as good as dennys or mcdonalds?

Answers:

you have to use shorting vegetable is good but fry
slice them in strips and put them in a plastic bag
add 2 tab oil and 1/2 tsp salt shake well and put in frying pan after you get the oil walking in the pan
(good and hot and starting to move on the surface) add the fries and leave them for about 1 minute stir ever minute for usually about 10 - 15 minutes. if not enough salt add after removing from heat and eat. if using cottage fry size them it may take 16 - 18 minutes. do not do this on high and stay with it you do not want the oil to change to trans-fats and you do not want a fire on the stove hot oil is dangerous for fire and skin burns beware once you remove the fries let them drain for about 1 minute before serving



McDonald's fries? Really? First of all that's absolutely disgusting. Here is how you make real fries. Take russet potatoes and peel them. Then, cut them into the shape you want. Then soak them in a bowl of ice water for 20 minutes. This removes some starch so that they're crispy instead of soggy. Then melt some duck fat in a pan, and fry the fries in the fat, turning them occasionally so all sides get crispy. Then put them on a paper towel, sprinkle with salt, and let dry for a couple minutes. That's how you make real french fries. Notice it doesn't involve a deep fryer or soybean oil.



Peel the potato's then slice them what ever size you want. Then put them in Ice water put them in the refrigerate for an hour to let some of the starch out. When ready to fry dry off fries with paper towel.

Heat oil at a medium heat cook potatoes in oil for about 5 min 250 degrees
Take the fries out of the pan turn up the Temperature to 350 of the oil takes appox 3-5 min
cook fries again until golden brown. This way they wont be soggy. they will be crispy.



Without knowing what theirs taste like I will say to you to decide if you want a decent thick chip or one or the 'shoestring style'. The skinnier the chip the more fat it will absorb, The main thing is to get the oil to the correct temperature, and double trying is the best method. Here's my recipe.
Chips:- Perfect
2kg Large potatoes, peeled.
Vegetable oil for deep frying.
(I) Wash or soak in cold water and thoroughly dry potatoes and cut lengthways into 10mm sticks.
(II) Heat oil and lower chips into the pot a few at a time into moderately hot oil. Cover and cook for about 4 minutes, or until pale golden.
(III) Remove and place on paper towels. Repeat with rest.
(IV) When ready to serve reheat oil, and cook again in batches, until crisp and golden. Drain on a paper towels.
Note.
Potatoes needn’t be in sticks and at the end of step 2 they can be stored refrigerated several hours ahead or wrapped and frozen.

to make good homemade french fries you need a deep fryer.how many you can make depends on the size of the deep fryer.try to get one with a basket included so you don't have to fish them out with the scoop like many fryers come with
