Can you overbraise a brisket?!
If it says on the package to braise it for 5 hours and I braise it for 8, would it ruin it, or make it too mushy? Too tough?

I think it would be even better. It is tough meat.
As long as you braised it on a low heat and in good stock so it didn't cook dry.
