You won't want to use road apples. They don't make good pies.

A combination of apples are bet for apple pie. I would use mostly Granny Smith, but if you have other apples on hand, those that are sweeter or might become a bit softer, you can use those too. The combination of textures in apple pie can be very pleasing.

Don't skimp on the sugar in the crust. It will counter the tartness of the apples and give the crust a nice "snap".
