Creamy tortellini pasta salad with andouille and chilled shrimp

Ingredients
2 tablespoons vegetable oil
1 yellow bell pepper, sliced
1 large Vidalia onion, sliced
3 cloves garlic, minced
2 teaspoons fresh minced oregano
Kosher salt
Freshly ground black pepper
Pinch of red pepper flakes
1 bottle Newman's own Parmesan roasted garlic dressing
1/3 cup Hellmann's mayonnaise
2 Aidell's Cajun Style Andouille sausage, grilled and chopped
8 ounces 21 - 26 shrimp, cooked, chilled and chopped
9 ounce package frozen cheese tortellini

Method
Heat a large sauté pan over medium-high heat for 2 minutes. Add the oil and heat another 2 minutes. Add the bell pepper and onion and toss to gloss. Add the garlic and season with salt and pepper. Cook until the onions are just beginning to caramelize; taste for salt and pepper and add the oregano. Remove from the heat and scrape onto a plate to cool.

Meanwhile, bring a large pot of heavily salted water to the boil.

Pour the dressing into a large bowl. Add the mayonnaise and whisk to combine. Add the cooled vegetables, andouille and shrimp and toss to coat.

Add the tortellini to the boiling water and give it a big stir. When the first tortellini or two come to the surface, drain the pasta and rinse with fresh cold water and drain thoroughly.

Add the pasta to the andouille-shrimp "sauce" and toss to thoroughly coat.

Pasta salad can be served immediately or covered and refrigerated overnight.



Get some cork screw pasta, bottle of italian salad dressing, I like the Newman Own the best. Chop up some tomatoes and a can of black olives. Boil pasta, drain, while still warm add the salad dressing and tomatoes and olives. Refrigerate and serve.

You can also add in some ham and green onions or even serve warm



Japanese Salad

1/2 cup each of slivered almonds & sunflower seeds.

Brown these in oven 350 degrees for 10 minutes. Stir part way through.

Mix 1 package Ramen beef flavor noodles & 1/2 to 1 cup chow mein noodles with the almonds & sunflower seeds.

In a separate container, mix 1/2 head shredded cabbage & 2 green onions, chopped.

Dressing:

1/2 cup olive oil
3 tablespoons vinegar
4 tablespoons sugar
1 tablespoon soy sauce
1 soup seasoning packet from Ramen noodles

Combine & pour over cabbage & onions.

Wait until just before serving to add almonds, sunflower seeds, & noodles.

Labor Day Pasta Salad
Yields: 8 servings

For Labor Day, serve pasta with a no-cook sauce. Made with a few simple ingredients, including tomatoes, blue cheese & fi-esh basil, the following recipe is both easy & inexpensive to prepare.

Pasta Salad

12 plum tomatoes (about 1 1/2 pounds), quartered, or 1 pint cherry tomatoes, cut in halves
2 cups (lightly packed) whole fresh basil leaves
2 ounces finely crumbled blue cheese
2 tablespoons olive or vegetable oil
2 tablespoons white-wine vinegar
Salt & pepper, to taste
1 pound penne, mostaccioli or other medium-shaped pasta, uncooked

Toss the tomatoes in a bowl with the basil leaves, blue cheese, oil & vinegar. Season to taste with salt & pepper. Refrigerate & let marinate for 45 minutes to 24 hours.

Just before serving, cook the pasta according to package directions; drain thoroughly. Transfer the pasta to a mixing bowl while still warm. Add the tomato mixture & toss to mix. Let stand at room temperature about 15 minutes before serving.

Note: Use the smallest leaves of the basil for this recipe. If the leaves are longer than 1 inch, tear them in half crosswise before adding to the tomato mixture.

Option:

Grill 8 to 12 ounces boneless, skinless chicken breasts. Cool 5 minutes after cooking, then cut into thin strips. Toss chicken while still warm with the pasta salad. Serve immediately.

Amazing Macaroni Salad

1 package elbow noodles
3 roma tomatoes
1 small purple onion
1/4 cup sweet relish
1 small can (Lindsay) chopped olives
6 hard boiled eggs
3/4 cup mayonnaise
1/4 cup mustard
salt & pepper

Boil noodles until soft, drain, rinse let cool in refrigerator, while cutting everything else. Dice tomatoes cut onions finely cut eggs (like making deviled egg sandwich) then mix together all ingredients at or leave out whatever you want to liking! Best if made day before.

Dang Cold Asian Noodle Salad
Yields: 4 servings

1 package soba noodles
1 teaspoon sesame oil
2 tablespoons rice wine vinegar
3 tablespoons soy sauce
1 teaspoon hot chili oil
1 tablespoon hoisin sauce
5 tablespoons extra-virgin olive oil
1 carrot, thinly sliced or julienned
2 celery stalks, thinly sliced or julienned
5 green onions, bottom 4 inches, thinly sliced
1/2 cup thinly sliced napa cabbage
1/2 red bell pepper, thinly sliced or julienned
1/2 cup julienned bok choy
1 cup bean sprouts, optional
3 tablespoons minced fresh cilantro leaves
3 tablespoons sesame seeds, toasted, for garnish
4 tablespoons unsalted peanuts, for garnish

In a medium stock pot, boil water, add salt & cook noodles. When finished, place noodles in an ice water bath to cool. Drain & set aside.

In a medium bowl combine, sesame oil, vinegar, soy sauce, hot chili oil, hoisin & extra-virgin olive oil. Mix thoroughly & then combine prepared vegetables & noodles.

Garnish with sesame seeds & peanuts.



Easy Pasta Salad

What You Need
2 cups rotini pasta, uncooked
2 cups fresh broccoli florets
1 cup halved cherry tomatoes
1/4 cup sliced black olives
1/3 cup KRAFT Light House Italian Dressing
1/4 cup KRAFT Reduced Fat Parmesan Style Grated Topping

Make It

COOK pasta in large saucepan as directed on package, omitting salt and adding broccoli to the boiling water for the last 2 min.; drain. Place in medium bowl.

ADD remaining ingredients; mix lightly.

green olives
Italian dressing

put as much stuff as you want in the amounts you prefer :) I love this salad...it never gets old!!



Pasta with fried aubergines

Cut aubergines in no big slide, pass in floor and fry it.

On a side make a sauce with olive oil, tomato and fresh mint.

When u serve the pasta add fried aubergines on top and mix it.

Delicious!:)



Crazy shaped pastas - cooked al dente, Balsamic Vinegar and olive oil dressing, sliced and diced assorted veggies, fresh herbes like basil finely shredded.
