You're on the right track, however rather than steaming or microwaving you want to go ahead and quickly pan-fry your corn tortillas in a touch of neutral oil, exactly what Kathleen said in her response. In our house we lay the tortillas out on flour sack towels to absorb some of the oil, but this adds texture and flavor at the basic level. Enchiladas are all about layering in the flavor.
Next step is to dip each tortilla into your 'to die for' sauce (we warm ours in the Castillo household so that it's a bit thin).
Next, fill with your favorite cheese & or filling and roll.
Prior to baking add your sauce and bake.
When finished garnish w/ queso fresco & fresh cilantro and buon appetito!



This is like the third time I have seen this question with the exact same one answer... what gives? Are you just trying to rack up points or what?
