Can a cream cheese frosting filled cake covered with fondant be left out over night?!


Question: Can a cream cheese frosting filled cake covered with fondant be left out over night?
I am making a baby shower cake two layers its filled with a strawberry cream cheese filling and covered in fondant. I know NOT to put the cake in the refrigerator over night( Ive done that before and the fondant got really hard and cracked) but, if I leave it out will that affect the filling?

Answers:

Yes you can leave it out over night, sugar helps inhibit bacteria growth, it will be fine for over night, but store any left over cake in the fridge after that. Leaving it out should not affect the filling unless you are in a very warm climate. But at this time of year I think it should be fine.



I know the situation you describe. I recommend putting it somewhere cool like a garage. I've been known to put cake outside, under a coloche to keep dust and bugs off it!!!
