How to get a baking + pastry internship?!


Question: How to get a baking + pastry internship?
Hi I am looking for a baking & pastry internship for the summer 2011. I am currently enrolled in a culinary arts program. I work at McD's and I have never worked in a bakery so I have no experience in the area. Where can I find an internship? Should I just email a bunch of bakeries? (if so what should I even write?)

I live in San Diego.
I'm 18.
I have my own transportation.
I do not mind having an unpaid internship.

Or do you know of any great programs for baking & pastry that I could apply for?

Get the word out to all your friends that this is what you want to do. Maybe one of them will have an in at a bakery which you can use to your advantage.

Go to bakeries and ask to talk to the person in charge and let them know what you are looking for--do this during a less busy time of the day for the bakery so they will not be inconvenienced by your visit. Many chefs are willing to talk to someone who is passionate and excited about what they are doing, and showing your enthusiasm will make they more likely to seriously consider your offer. If you really are serious, and can't get anyone to hire you for an internship initially, try to find any job which puts you into the bakery--dishes even--and make it known that you would like to move into production if ever the opportunity presents itself! Any way you can show them that you are a hard worker is a point in your favor.

I actually did this last year and I've worked my way up from my job as an untalented decorator's assistant (with no actual interest in decorating, but a giant interest in baking) to now being in charge of the bakery's production. I had zero experience in baking, aside from what I had done at home, but I was enthusiastic, hard-working, and let everybody know how much I wanted to bake. The boss took notice and taught me what I wanted to learn!

Hope your search goes as well as mine did (you even have one up on me with the culinary arts program experience). Sometimes, word of mouth and enthusiasm for work really can get you where you want to go!
