what temperature is lamb perfectly cooked?!


Question: What temperature is lamb perfectly cooked?
I'm cooking a rack of lamb, but Id rather work off a meat thermometer than just using a timer

Also would this temperature be the same for a leg of lamb?

140-145 and let it rest for 10 minutes

I'd take the leg up to 155-160 simple b/c I like my legs more well done than my racks

If you want lamb well-done, it's 170 degrees. And yes, whatever the cut of meat, the size, or thickness, it always should be the same temperature.
