I'm going to fly in the face of established opinion here and suggest a nice Napoletana - if they're spinach tortellini, that'll do nicely.

Bacon, sun-dried tomato and cream sauce with parsley would be great

alfredo sauce would be perfect

white creamy sauce with lots of fresh herbs
