Question: My muffin turned out really hard....=_=?
Hey peeps! xD You see, I recently tried to bake muffins by myself, it's my first time baking and all. Everything went smoothly...well, sort of, except the muffins, before they were placed in the oven, were really, really sticky and kind of watery, but it's supposed to be like that, so yeah. =__=

I don't know what went wrong though, because my muffins turned out real hard. Appearance wise, I can say that they do look quite delicious, but the taste....argh, don't remind me. It wasn't so bad actually, but the muffins were just plain hard, so they ruined the whole taste for me.

I followed the recipe accordingly, really, I swear I didn't try to be a smart-aleck and modified the recipe by myself or something. Can anyone give me possible reasons as to why my muffins turned out so hard?

Here's the recipe, well, if it's needed for you guys to answer this question anyway:


Twoberry Muffins

Ingredients:

1 cup (125g) wholemeal flour
1 cup (125g) plain flour
1/3 cup wheatgerm
2/3 cup (155g) white sugar
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
2 eggs, beaten
2 cups light cream
1 cup fresh blackberries
1 cup fresh blueberries

Preparation Method:

1.Preheat oven to 200C. Butter the cups of a muffin tray.

2.In a large mixing bowl, whisk together flours, wheatgerm, sugar, baking powder, salt and cinnamon. In another bowl, whisk together cream and eggs. Stir wet ingredients into dry, mixing just to combine. Fold in berries. Scoop batter into muffin tray cups. If there are any empty cups, fill those halfway with water.

3.Bake in preheated oven for 20 minutes, or until done.

It's entirely possible that they are just hard muffins. Not all muffins turn out soft and fluffy.

As for something that could have caused them to be unduly hard, not all ovens heat exactly the same. I know, they seem like they should, right?
Did you bake the muffins for the full 20 minutes, or until you determined them to be done?
I know a lot of baking instructions say to insert a knife or toothpick in to the baked item and if it comes out clean that means it's done, but some items will always remain a little bit goopy inside until they're allowed to cool. You could have just cooked them for too long.

And, this is just me, but I love baked goods to be softer, and almost always substitute out some of the white sugar for brown sugar. This helps a lot with softness.



When baking it can be tricky sometimes, always have a toothpick or fork/knife etc to stick inside the muffin once the inside is no longer gooey it's done. You probably had the muffins either too close or too far in the oven



Without the berries there was less moisture in the muffins. Try cooking them for 15 - 17 minutes. I would feel them with my fingers to check to see if they're done enough. The toothpick trick doesn't work very well on muffins in my opinion.

sounds like you did everything fine to have then soft and moist you can take them out of the oven a little earlier



they might have been over mixed or over cooked overs temps can be off either to high or to low



Quick breads (muffins) should be prepared by blending all the dry ingredients in one bowl and the wet ingredients and sugar in another bowl. When you add the liquid ingredients to the dry you should take care to hand stir gently and in as few strokes as possible. Over-mixing will make the muffins tough.

P.S. Your recipe sounds fine except for the 2c. of light cream. That is an awful lot of liquid for 2 c of flour.

They might have put in extra flour or something. Or it might be your elevation. Is your oven gas mark, Fahrenheit, Celsius? There are many answers to your hard muffins :< All you have to do is make an observation and try again. Works for me! :)
