Question: What herbs do i add to wild mushroom soup?
Im making soup from wild mushrooms (porcini etc.) Its dry mushrooms I soaked in hot water, I'll add some carrots and celery. But I need to know what spices to add besides salt and pepper. thanks.

The herb thyme is the mushroom's friend. A teaspoon and a half will do for a large pot. 1 teaspoon for a smaller pot of soup. If it is a creamy soup add a little sage too. About 1/2 teaspoon.

You definitely should add some sauteed onion and/or garlic to it too. Just sautee 1 small onion with 1/2 tablespoon butter. Once they've started to become slightly golden on the edges add 1 clove of minced garlic or 1/4 teaspoon garlic powder. For best results sautee the herbs in the butter/oil with the butter as it will open their flavor up more.

Lots of years experience cooking mushroom soups. I love them!



I wouldn't add anymore so you don't overpower the mushrooms

Simple is best in this case.



There are lots of recipes online, but I'd add leek or onion and maybe some thyme. It's actually all a matter of personal taste.
