Question: Can i substitute the mushrooms in a beef wellington?
Answers:

Yes you can, it just wouldn't be called beef Wellington anymore.
I have seen it done with spinach which gives a nice green layer.



Beef Wellington calls for duxelles, which are mushrooms chopped fine and sauteed with herbs.
I don't know what you'd replace them with, but if you did, you really couldn't call the dish Beef Wellington.



Lol , the dish actually calls for pate , mushrooms are a substitute for that. You may as will go back to the original and use pate.



You can just omit them and it is just as good.
