Answers:

1. Place eggs in cold water (enough to cover the eggs ~1 inch)
2. Bring water to boil over medium heat, then cover
3. Remove from heat, & let eggs stand in water 15-20 minutes
4. Cool immediately with cold water.
5. Once cool, they can be removed from the shell.

This will prevent a green ring from forming around the yolk.

Hard boiled or poached? For hard boiled: Bring water, 4" to 6" deep, to a boil, and turn down to a simmer. You want bubbles, but not a "rolling" boil. Add a teaspoon of salt (optional, per your taste preference. I use sea salt.) and a tablespoon of white vinegar per quart of water. The vinegar will keep the white in the shell if it cracks. Use a bent spoon or ladle to lower the egg into the water. Then, time is on your side, 5 to 15 minutes depending on the size of the egg and how hard you want it to be. If this is your first time, experiment. Use a pencil to mark the shell with size and time so you can relate what the inside is to time and size. Pencil ONLY. The lead will not come off the shell. 5 minutes for a medium size egg is a soft boil, which will still have a partial liquid yolk. 15 minutes for extra large size egg for a totally hard yolk. 8 to 12 minutes for the "usual". For poaching, the difference is cracking the egg into a oiled or buttered ladle and then rolling the egg out into the water. Again, the vinegar will help the egg stay roundish. Same times apply. The water has to be deep enough that the white will not touch the sides of the pot. Use an oiled or buttered spoon to keep the egg away for the sides and bottom if needed. That, is the way my mom taught me when I was learning my around a kitchen...
