What can I eat with cooked salmon?!

Question: What can I eat with cooked salmon?
I'm really hungry and have some salmon left over from yesterday. What should I eat it with? Preferably not potatoes...Thanks

Answers:

My last meal would be poached salmon, green beans, and couscous (butter over all of it).

Sounds weird, I know, but good lord, it's a great meal.
Had it once, the best ever.

If it's a left over, go with breaking the fish down, and adding it to a salad (romaine lettuce).

That, or add it to a pasta casserole, or make a fish salad sandwich (the best you will ever taste).

Salmon is the best ever, then comes sole, and Chilean sea bass (legally caught and sold, a great tasting fish), but salmon is my all time favorite, nothing really compares.

I didn't mention potatoes at all, hahaha.

Roasted asparagus

Heat oven to 375 degrees F.

Trim the tough ends off a bunch of asparagus and then snap each in half. Arrange in a single layer on a baking sheet, drizzle with 1 tablespoon of oil and season with 2 teaspoons salt and 1 teaspoon freshly ground black pepper.

Roast the asparagus for 11 to 13 minutes or until fragrant and the tips are slightly charred

have you ever had creamed salmon with toast. Make a simple white sauce add peas and baby carrots, and chopped up boil eggs and season to taste. Some people pour it over hot dry toast or serve toast on the side. We had this as a staple growing up as salmon was so cheap back then.

I love creamed carrots and salmon
You slice up the carrots. Boil. Then just and butter a little bit of flour
and some milk. Heat til it thickens some.
The sauce is great w/ the salmon
