Recipe for a crowd?

I'm looking for a vegetable or fruit dish, for an up coming family reunion that will do well traveling 2 1/2 hours. You can email if it's easier.

There are some sites I use to help me with this...even if I don't follow exact recipes, these help me determine about how much of certain ingredients I am going to need! Plus they give a ton of recipes!!

What I did a couple years ago for a family reunion - picked up some whole seasonal fruits (pineapple, melons, cherries, etc) packed them in an ice chest with ice for traveling and cut them up at the reunion site (it was a county park). Everyone loved them as they were a great extra to snack on.

You will need a cooler, but this is very good.
Chop or slice veggies:
Cucumbers, green peppers, mushrooms, celery, tiny whole tomatoes, red onion (optional), cauliflower, broccoli, whole pitted black olives. Pour a bottle of Zesty Italian dressing over all. (I use fat free). Put in large bowl with tight fitting lid, or zip lock bags and place in cooler to transport. Can pour into bowl at reunion site.

A good dip for the fresh fruit idea above is:
1 jar marshmallow cream
1 8 oz. pkg cream cheese. Beat together and put into serving bowl. Pop into cooler.

My Frittata's are quick and easy to make so you could make several and can be eaten, hot cold or reheated. I use a 12" fry pan.

Frittata. Ham.
6 eggs beaten.
1 teaspoon oil.
? cup grated cheese
200g ham.
Tomato.
Salt and freshly ground Black Pepper.
1 table spoon of Fresh chopped parsley.

Heat the fry pan and add oil on a low heat and add cheese, ham, tomato, salt and pepper to beaten eggs and stir in.
Pre heat the grill.
Pour in the egg mixture and cook for 5 minutes. Do not stir.
To finish cooking put under the preheated grill until the top is brown.
Serve sprinkled with the parsley.

Frittata. Vegetarian.
Thaw or boil 1lb frozen veges, and allow to drain and cool.
Place in a range top to oven dish. Must be shallow.
Whisk together 6 medium eggs and pour over veges and cook on med low heat until the eggs are beginning to set and the transfer to oven and place under a medium hot grill, until the eggs are set and the top is brown.
