I don't have an issue with fat, I am wondering strictly about the vitamins and nutrients. Does anyone know the actual science behind it?

Honestly...if you're going to deep fry vegetables...why would you care about the nutrients???
But yes deep frying them does kill their nutrients and makes them really fattening. Try steaming them
Yes, definitely. Eating raw vegetables or either steaming it in a short time will preserve its nutrients. Steaming is the best way of cooking so far especially if you want to lose some weight.
I don't know about frying, but I do know that boiling foods will kill a lot more nutrients than steaming them.
Bottom line: It is better to steam your vegetables.
Yes, frying will kill the nutrients.. Its always healthier to steam your veggies. But don't over steam them either; I guess the key is keeping it as fresh as possible.
