What is your favorite herb for cooking and how do you use it?
I love fresh basil, and use it often, but I'm always open to new ideas.

Garlic!
Sprinkle liberally on everything except ice cream and coffee.
But seriously, if you are into the southwest flavor it's hard to go wrong with cumin.
It's not really an herb, but I use Garlic powder in pretty much everything. I mix it in with hamburger, tacos, season steaks with it, etc. It's good for you, and it gives a great flavor.
Thyme and Rosemary make great herbs for cooking and works well with many recipes!
Also, I'm Italian and I use Garlic in pretty much everything!
I love fresh coriander. It adds a nice flavour especially when sprinkled on top. It is used a lot in Thai and East Indian cooking.
My favorite seasoning in Ground Black pepper and the more, the better. For herbs, I love basil and oregano. But I think parsley gives a fresh clean taste and good color to many dishes.

I like to use Cumin. I eat a lot of TSP (textured soy protein), and Cumin really adds a good savory fullness to the dish that you often have a hard time finding in vegitarian/vegan food.
right now, loving chives...put them in everything...scrambled eggs, salad, potato anything! Just the best...really low maintenance to grow and add a nice bit of an onion type taste to all appropriate foods...
Basil and Oregano. Black pepper and paprika are not exactly herbs but they are also my favorite and I use them in almost every dish I make. Sprinkle some basils and Oregano on bread, spread with butter and garlic mixed together and grill. Nice!
I add Basil (fresh or dried) to anything with tomatoes.
With canned spaghetti sauce, I add oregano also.
Spinach and herb mix
Spinach & Herb Parmesan Chicken
Ingredients
2 beaten eggs
3/4 cup grated Parmesan cheese
2 Tbsp. Spinach & Herb Dip Mix
4 - 6 boneless, skinless chicken breasts
Directions
Pour eggs in shallow dish. Combine cheese and Spinach & Herb Dip Mix. Dip chicken in egg; roll in Parmesan cheese mixture. Place in greased baking dish; bake at 350° for 20-30 minutes.
