What about Ground Beef Stroganoff? I found this receipe some time ago and make it when I want something different that's not a lot of work.
Ground Beef Stroganoff
1 1/2 lb ground beef
1 med chopped onion
1 clove fresh garlic - minced
1 can cream of mushroom soup
1/2 cup sour cream
Hot egg noodles
In a skillet, brown meat, onions and garlic until meat is cooked, drain. Add soup and heat through. Remove from heat and let cool just a bit, then stir in sour cream. Slowly bring back up to a simmer and cook until heated through. Serve over cooked noodles or rice.
I always add frozen peas to this because I like peas. You could also add fresh mushrooms.
Enjoy!!!
Sloppy Joes with baked beans.
posted this one yesterday... a family favorite. you'll have to adjust for more meat although it is pretty forgiving recipe. I manage to always put more wine in it than water. Hope this helps.
Shipwreck Casserole
An old-fashioned "hamburger hot dish" from an old newspaper clipping.
1 cup chopped onion
2 medium potatoes, shredded
1 pound lean ground beef
1 cup shredded carrots
salt and pepper
paprika
1 can mushroom soup
1/2 cup boiling water
1/2 cup red wine.
Butter a 2-quart casserole. Layer with onions, potatoes, ground beef, carrots, sprinkling each layer with salt, pepper, and paprika. Combine soup with boiling water; pour over all. Pour wine on top. Bake at 300° for 3 hours.
Shipwreck casserole serves 4.
How about some chili? Or some type of soup? Also, you can make Won-Tons (get the wrappers) ans stuff them with the meat...eat with veggies and rice. Or Nachos. Or a home-made pizza. Good luck. Meat stuffed potatoes, etc.

mom used to make what she called porcupines...
mixed the ground beef with uncooked rice... a bit of her favorite seasonings, rolled into balls like meatballs and baked with tomato sauce...
we loved them - sometimes just before she took them out of the oven she would put some cheese on top...
:-)
My dad used to make this for us when we were kids, it is very good. Mix the hamburg with diced onion, catsup, salt, pepper, and garlic powder. A little bit of diced green pepper if you have it. Spread this over slices of bread, and put under the broiler until the meat is done. You might not need the whole pound and a half of meat
How about Shepherd's Pie?
Make a pot of mashed potatoes, brown the meat with some onion and drain.
Then layer in a large casserole dish, thin layer of potatoes, beef, corn (niblet or cream is fine, you can even use mixed veggies if you want...anything you like really),
put the rest of the potatoes on top, brush with egg white and bake until top is crispy.
I've never met a person who didn't love this stuff and it's super cheap to make.
Maid-Rites
Brown hamburger in pan on stove. Drain grease. Add one can of Campbell's Chicken Gumbo soup. Whaalaa. Serve on buns with ketchup, mustard and relish (or whatever you like).

one of my favorites - make patties and cook, smother in brown gravy, onions, mushrooms, peppers, cheese whatever you love!! Or do the same in the over, with some cream of mushroom soup - great with mashed potatoes.
