They are a pasta like any other, only in sheet form, so anything you can do with pasta you can do with lasagna noodles too. Try making layered casseroles and change up the layers. You can do a Mexican one and use salsa, refried beans, cheese, meat, etc.... or you can do layers of alfredo sauce, veggies, chicken, or you can do a breakfast one and do eggs, sausage gravy, cheese. You can also do lasagna rollups and take a cooked noodle, spread it with cheese and sauce and roll it up. Those can be frozen and reheated whenever you like, without having a big pan of lasagna to make.

Ingredients:
9 oven-ready lasagna noodles
2 eggs
16 ounces container ricotta cheese
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
2 cups finely chopped, skinned cooked chicken
1 1/2 cup grated mozzarella cheese
2 cups spaghetti sauce
1 teaspoon dried basil
1/2 teaspoon leaf oregano
1/4 teaspoon ground black pepper
Directions:
Place noodles in a dish. Cover with boiling water and let sit until flexible, about 10 minutes. Drain and spread out on a flat surface.
Meanwhile, whisk eggs in a bowl, Stir in ricotta, salt and nutmeg until well blended. Then, stir in chicken and 1/2 cup mozzarella.
Preheat oven to 350 F. Spoon about 1/3 cup of filling onto each noodle and spread along length of noodle, leaving 1 inch uncovered.
Starting at filling-covered end, roll up, jelly-roll fashion, and place seam-side down in a 8x8 inch dish.
If spaghetti sauce is not highly seasoned, stir in basil, oregano and pepper. Pour over noodles. Cover with foil and bake for 45 minutes.
Uncover and sprinkle with remaining cheese. Continue heating until center is hot, about 10 to 15 more minutes. If making ahead, casserole can be covered and refrigerated for 1 day. A cold casserole will need an additional 10 minutes baking time.
Lasagne noodles can be used for a variety of things:
1. lasagne rollups with marinara sauce
2. broken up in soup or stew
3. as a "noodle crepe" to be filled with chicken etc. and served with a bechemel sauce.
Because you are dealing with a pasta, you can do just about anything with them. Cook them first, drain and then cut to order, or fill and serve ravioli style. Enjoy!
u can cut them up long ways, and use them like decoration for spaggeti and alfredo, it'll taste the same. My idea would be alcombreto.
You can roll them around pieces of beef or chicken and cover them with a sauce and bake.
You can use them for stuffing with meats cook the noodle and place whatever kind of sauce or meats inside and roll em up. Don't forget to add cheese.. Many different options on what to stuff them with. Maybe sausage or hamburger or cheese blends vegetables if you like that option.. I say use your imagination.

1 lb bulk Italian sausages
2 cups onions, chopped
1 cup carrots, diced
2 cups mushrooms, sliced
2 tablespoons garlic, minced
4 cups chicken broth
1 (14 1/2 ounce) can Italian-style stewed tomatoes, chopped
1 (10 3/4 ounce) can tomato sauce
1/2 box broken lasagna noodles
2 cups fresh spinach, chopped
1 cup provolone cheese or fresh mozzarella cheese, diced
1/4 cup parmesan cheese, shredded (for garnish)
4 teaspoons thinly sliced fresh basil (for garnish)
Brown sausage in a large saucepan over medium-high heat. Add onions and carrots; saute 3 minutes. Stir in mushrooms and garlic, and saute another 3 minutes.

Yes, you can stuff them and roll them up. A stuffing I like is spinach, sauteed onions, and ricotta, add 1 egg, mix well, place a large spoonfull on one end of the noodle, roll up. Make a panfull, then pour alfredo sauce over it and bake until bubbly. Delicious
Well, I make a different kind of lasagna. I love it! Doesn't sound like the noodles will go with the ingredients, but trust me its good.
