dad is bringing his girlfriend over and its the 1st time in 8 years i have allowed any contact between myself and her (long story) but i want it to be a good day!! help
Answers:
Jalapenos cut in half longways, stuffed with cheese, wrapped in a piece of bacon and grilled or baked. Cooking them takes almost all the heat out of the peppers.
Zucchini cut in quarters, hollowed out and marinated in olive oil, italian spices, grated parm. and stuffed with maranara, bread crumbs and topped with provolone, then grilled or broiled until the cheese is golden

Grilled corn on the cob or grilled Asparagus. Spinach dip is always a good app. And it's strawberry season so strawberry shortcake or if you want to be adventurous try these grilled fruits.

how about something lite and easy for your appitizer
Easy Bruschetta
1 large ready-to-eat pizza crust (or similar bread)
2 cloves garlic, finely chopped
1 cup diced tomato
8 fresh basil leaves, sliced thin in strips (or 2 teaspoons dried or crushed)
salt and pepper, to taste
1 cup shredded mozzarella cheese
Preheat oven to 375°
Toss together cheese, garlic, tomato, basil, salt and pepper.
Spread mixture on top of bread. Place on baking sheet.
Bake at 375° for 8-10 minutes or until cheese in melted.
Cut in slices, serve immediately.

Chile-Cheese Stuffed Tomatoes
4 medium tomatoes
1/2 c. sour cream
2 tsp. flour
1 tbsp. chopped green onion
1/2 c. shredded Cheddar cheese
3 tbsp. canned green chiles, drained
Cut tomatoes in half, horizontally; scoop out pulp, leaving shells intact. Discard pulp.
Place shells upside down on paper towels to drain.
Combine sour cream and rest of ingredients and spoon into tomatoes.
Place in a greased 13 x 9 pan.
Broil 5 1/2" from heat 4 minutes or until thoroughly heated.

Corn, Bacon and Peppers Recipe
2 slices lean bacon
1/2 C. chopped onion
1 small red bell pepper, chopped
1 small green bell pepper, chopped
1 jalape?o pepper, minced with seeds
2 C. frozen corn kernels
1 T. rice vinegar
salt to taste
In a medium skillet over medium heat, cook the bacon, turning it from time to time, until crisp.
Transfer to paper towels to drain.
Pour off all but 2 teaspoons of the bacon fat, return the skillet to the heat and cook the onion, bell peppers and jalape?o pepper, stirring, until softened, about 4 minutes. Add the corn and 2 tablespoons of water and cook, covered, for 3 to 4 minutes or until the corn is hot.

Gingered Heavenly Hash
1 (one lb) can fruit cocktail
1 1/2 c miniature marshmallows
1 c sour cream
2 T finely chopped crystallized ginger
2 T toasted slivered almonds
Drain fruit cocktail.
Combine fruit, marshmallows, sour cream and ginger. Chill 3-4 hours.
Just before serving sprinkle with almonds.
6 servings
May be served over slices of angel food cake or spooned into sherbet glasses.

Deviled eggs are always a winner in my book.
I think grilled Corn on the cob goes great with Ribs and Chicken.
Fruit as another side/appetizer is always a good choice. Whatever is in season.
For dessert go check out the freezer section of your grocery store. You don't need to stress yourself out trying to make everything perfect. Simple ice cream with stick wafers can be elegant and super easy.
A nice appetizer we like is zucchini bites. Buy small zucchini's, cut them lengthwise, scrape out the seeds and brush with olive oil, salt and pepper. Bake in the oven at 400 for about 10 minutes. Spoon salsa into the crevice, top with grated marble cheddar, put back in the oven until the cheese melts. Take them out, cut into bite size pieces.
Bruschetta is a great appetizer. A layered taco dip is another one that goes well. I have a recipe for a bacon tomato dip that is awesome too. If you want it, post and I will add recipes to this answer.
Another side dish would be asparagus....love that and super easy. Just steam with a little water, turn the pan off as soon as the water starts to boil and leave the pot covered until time to serve. Add a little salt and tiny bit of butter and that's it.
Dessert, I would do a trifle. I love them and they look gorgeous. You can do a chocolate cherry one, or vary what you layer. Basically it is cake (or brownies) chopped up in chunks, pudding, whipped cream or cool whip, fruit filling. Layer all of them in a pretty glass bowl or trifle bowl. Do up the top decoratively with a few cherries or strawberries or bits of cake or brownie plus whipped cream. Super easy and impressive and best to do ahead of time at least a few hours. I've got another recipe for an eclair cake that is even easier if you want that one :)
Strawberry shortcake, and Baked beans, Or grilled corn.
My newest favorite summer salad: cut up artichoke hearts, hearts of palm, cucumber (lots!), add in garbonzo beans and toss with balsamic vinagrette dressing and a little dijon mustard. Add in avocado chunks before you serve. Carrots would probably be good in there too. Or anything else you like. You can make it a day ahead of time and it's just as good, if not better.
For dessert, how about a Sundae bar?
Chocolate and Peanut Butter Ribbon Dessert
12 Nutter Butter peanut butter sandwich cookies, divided
2 tablespoons butter, melted
1 8oz. package Philadelphia cream cheese, softened
1/2 cup creamy peanut butter
1/2 cup sugar
2 teaspoons vanilla
1 12oz. tub Cool Whip whipped topping, thawed & divided
2 1oz. squares Baker's semi-sweet baking chocolate, melted
Crush 8 of the cookies in resealable plastic bag with rolling pin. Mix cookie crumbs and butter. Press onto bottom of foil-lined 9x5-inch loaf pan.
Mix cream cheese, peanut butter, sugar and vanilla with electric mixer on medium speed until well blended. Gently stir in 3 cups of the whipped topping. Spoon 1/2 cup of the cream cheese mixture into small bowl. Stir in melted chocolate until well blended; set aside. Spoon half of the remaining cream cheese mixture over crust. Top evenly with chocolate mixture; cover with remaining cream cheese mixture.
Freeze four hours or overnight until firm. Invert onto plate and serve.
Cornbread casserole......
1 box jiffy cornbread mix
1 egg
1 stick of butter
1 can sweet corn (drained)
1 can cream corn
1/2 cup sour cream
1/2 cup cheddar cheese
Mix all together, and bake for 60 min. ENJOY!!
