What kind of cheese do i use for Chicken Enchilada Casserole?
I got a recipe for it but it doesnt say what kind of cheese i should use.
Answers:
Cheddar or Monterey Jack
Chedder, or jalapeno jack cheese if you like spicey food.
You can use a sharp cheddar or some white jack.
You could also use queso fresco, since it's a Mexican cheese, but be warned...it doesn't melt when heated and it spoils quickly.
Cheddar or maybe pepper jack if you like it spicy
Sharp Cheddar, or the Kraft Fiesta Blend of cheese.
Monterey jack or pepperjack, or if you have an Ethnic Food section in your market, look for a flattish round of pure white 'queso' Mexican cheese and use that. You want to keep the white-on-white aspect to go with the chicken. Cheddar or longhorn would overpower the chicken tastes.. the white cheeses are more subtle.
I use the sharpest cheddar I can find.

Cheddar, Monterrey Jack, or Colby would be good first choices, or any combination of these. There are Mexican Blend shredded cheeses available that will be perfect for your casserole. Just the right subtle mix of flavors and textures.
Mix of Monterrey Jack, Mozzarella and Cheddar ( equal parts), if you want it creamier, add some baby Swiss also
