Question:

Help with CUPCAKES !!!!!!!!!!!!!!!!!?

Whenever I make cupcakes they go all sticky on the top and then peel away from the cupcake paper.............does this happen to anyone else? What am I doing wrong and how do I fix it ?

This happens - sometimes there is too much humidity in the air. For me, the trick has been to glaze or ice them as soon as they are cool enough to hold the icing. There are glazes that you put on hot cupcakes - those are great. If you have to keep cupcakes for a bit before you ice them, wrap them in plastic and freeze them. By the time you get them out and finish them up, they will be thawed.

If you are not putting any icing or glaze on them, think about using another topping. Often, I use large, decorator sugar crystals, cinnamon sugar, or a dusting I make with sugar, cocoa, and ground espresso.

Experiment. It's only baking - you can come up with a great, origional solution!!!

try puting pam when your making cupcakes next time

well one thing you can do is when your ready to cover your cupcakes pull out your cupcake paper and cover (as a mach covering amount) spray the cover with pam, cooking spray...etc and flip the sprayed side over on the cupcakes that way they wont stick to the top

you maybe letting them set to long before getting them into the oven. Have the oven hot and get them in asap are they fully cooked? does a tooth pick inserted into the center come out clean?

Don't overbeat them and try adding a slight vegetable oil, or maybe Pam. Also try cooking them a little longer.
