here is a recipe that i have tried, its pretty good and slightly lighter
Császárk?rte Cheesecake // Cheesecake Imperial Pear
* 8 Vanilla wafer, make crumbs
* 8 tbsps sugar
* 2 eggs
* 1/2 tbsps Hungarian pear essence (Császárk?rte aroma)
* 1 package cream cheese (250 grams), softened
* 13 tbsps sour cream
* 2 tbsps flour
- In food processor, process wafer.
- Using heavy duty aluminum foil, wrap outside from bottom to the sides of a spring form pan. Grease lightly with margarine the inside part. Sprinkle evenly wafer crumbs, set aside.
- Using electric mixer, mix cream cheese, sour cream, sugar, and flour, adding egg one at a time, until ingredients mixed well but do not over beating.
- Meanwhile, boil some water.
- Spoon a sum of the cream cheese mixture into a separate bowl, and mix in well the Császárk?rte essence, then pour to the crust evenly.
- Pour the left over cream cheese mixture, drop some essence on top. Using knife or bamboo skewer mix around the essence to make marble effect.
- Place pan in a shallow baking dish/baking pan. Pour hot water to the baking dish. Bake cheesecake for 45-60 minutes. Do not open for the first half hour otherwise cheesecake will fall.
- Turn off oven. Take out cheesecake from the water carefully. Peel off the aluminum foil and cool cheesecake at room temperature for an hour.
- Wrap cheesecake pan with plastic wrapper and place in the fridge for at least 2 hours. Best result is overnight.
NOTE: cheesecake will still a bit jiggly in the middle but firm on the sides. do NOT wrap with plastic wrapper when cheesecake still warm. do NOT let water drips onto the cheesecake. cheesecake will only be firm enough to cut after refrigerated for at least 2 hours-8 hours, but best overnight. cheesecake usually will cracks if you open the oven to take a peek. over beating the cream cheese mixture. oven too hot. you can double this recipe, I only live with my husband so I didn't think to make a bigger one but this yields more than 6 slices and yummie ^_^ for lighter cheesecake I suggest use nonfat cream cheese and nonfat sour cream which in this case I didn't hehe

CHERRY CHEESECAKE
CRUST:
1 cup graham cracker crumbs
3 tablespoons sugar
1/4 cup butter, melted
CHEESECAKE:
24 ounces cream cheese, softened
3/4 cup sugar
1 teaspoon vanilla extract
3 eggs
16 ounces cherry pie filling, chilled
Combine crumbs, sugar, and butter; press onto bottom of 9-inch springform pan. Bake at 350 F, 10 minutes.
Combine cream cheese, sugar and vanilla, mixing at medium speed on electric mixer until well blended. Add eggs, one at a time, mixing well after each addition. Bake at 450 F, 10 minutes. Reduce oven temperature to 250 F; continue baking for 30-40 minutes. Loosen cake from rim of pan.
Chill. Spread cherry pie filling over cheesecake before serving. 10 to 12 servings.

There are a ton of recipes and some dont need that much time to set. Good Luck.. Also go to a grocery store and get the no bake cheesecake dessert boxs they are good for a pinch.
Cheesecake is very hard to make. I don't know any recipes, but try going to a cooking website like Betty Crocker, or the Food Network. I am sure they will have step-by-step directions on making it. Good luck! =]
