Can you make tomato soup with tinned tomatoes?


Answers:
Of course you can.

My Latvian recipe for tomato soup is as follows:-

Onion, finely diced
Garlic, finely diced
Stick of celery finely diced
Carrot - grated
Tinned tomatoes - whole, in juice, chopped or otherwise
Herbs of your choice - basil goes well, though that is not a Latvian herb.
Hot stock - vegetable, chicken, beef - though not fish.
Tomato puree
Salt, and Freshly ground pepper
Worcestershire Sauce - though again, not strictly Latvian (or mushroom ketchup) - either way, just hold the salt until last tasting.
Sour cream and hot crusty bread to serve.

This can be served hot or cold, whizzed or unwhizzed.

Fry the veggies except tomatoes until soft, but not coloured.
Add rest of ingredients - if tomato is whole then I would advise breaking them up a bit to release the juices.

After about 1/2 hour remove from heat. Check seasoning and if you wish to whiz it up cool it down a bit and then put in food processor. Return to the pan and then heat up. You might need to add more liquid if you prefer a thinner soup in which case add more stock, or do as we do and add some milk to it - up to you - and heat through again.

Serve with plenty fresh warm bread and a dollop of soured cream.

take tomatoes and blend them into mixer, add seasoning, heat and thicken if needed with starch

Yes, just blitz them up until smooth and use them in place of fresh tomatoes

Yes - tinned tomatoes are often better because they are picked at the best time of the season. Fresh tomatoes are often sold out of season and arent at their best
