I am making an angel food cake and they are left over.

Tiramisu
6 egg yolks
1/2 cup granulated sugar
1/3 cup brandy
1/3 cup Marsala or coffee
1 pound mascarpone or ricotta cheese
1 1/2 cups whipping cream
3/4 cup extra-strong coffee
24 giant Italian ladyfingers
4 ounces semisweet chocolate; finely chopped
In bowl, beat egg yolks with sugar until light, about 5 minutes. Whisk in
1/4 cup each of brandy and Marsala. Transfer to double boiler over gently
simmering water; whisk for about 7 minutes or until thickened. Let cool.
Beat cheese until smooth; fold in egg mixture. Whip cream; stir one-quarter
into cheese mixture. Fold in remaining cream. Combine coffee and remaining
brandy and Marsala.
Arrange half of the ladyfingers in 11-x 7-inch glass baking dish; brush
with half of the coffee mixture. Spread with half of the cream mixture.
Repeat layers. Top with chocolate.
Cover and refrigerate overnight. (Can be frozen for up to 2 weeks. Let thaw
in refrigerator for 24 hours before serving.)

Spaghetti with Carbonara sauce
INGREDIENTS:
1 lb. spaghetti pasta
4 slices bacon
2 egg yolks
2 Tbsp. milk
1/2 cup grated Parmesan cheese
PREPARATION:
Cook the bacon in a heavy skillet until crisp. Remove from pan and drain on paper towels. Set bacon aside.
Cook the pasta as directed on package. Meanwhile, combine the egg yolks, milk, and garlic in a medium bowl and beat until well blended.

Bavarese in Chocolate Sauce
For the Bavarese
10 egg yolks
11 ounces sugar
1 quart whole milk
1 ounce gelatin sheets
1 quart heavy cream
For the Sauce
18 ounces bittersweet chocolate
1 cup espresso coffee
2 cups heavy cream
Make the pudding: Beat the yolks with the sugar until the sugar dissolves. Heat the milk in a saucepan; when it comes to a boil, add the egg and sugar mixture, whisking. Cook 5 minutes, or until thick. Meanwhile, soften the gelatin sheets in cold water; squeeze out excess water and add the softened gelatin to the egg mixture. Strain; cool. Whip the cream until soft peaks form and fold it into the cooled egg mixture. Pour into 24 2" aluminum molds and refrigerate for about 3 hours.
Make the chocolate sauce. Melt the chocolate in a double boiler with the espresso and 1/4 cup of water, stirring often. Whisk in the cream and cool. Unmold the bavarese on 24 serving plates and garnish with the chocolate sauce. Serves 24

Crem-caramel pudding
Ingredients
Milk 1/2 l
Yolks 3 n.
Egg 1 n.
Suger 200g
Vanilla 1 pinch
How to cook
Burn 80g of the suger with 3 spoons of water. Pour it quickly in a pudding mould with trying to cover all internal surface. In a bowl beat the yolks and egg with the rest of the suger to obtain a spongy mixture, add slowly the milk, vanilla and mix very well and pour in tha mould. Cook as bain-marie into an oven at 150 degrees for 45 minutes. Refrigerate and take out from the mould.

Ingredients:
4 large egg yolks
4 Tbsp. sugar
8 Tbsp. dry Marsala wine or Moscato d'Asti
Instructions:
1. Using an electric hand blender beat the egg yolks with the sugar in a medium sauce pan until fluffy and light yellow. Use the medium-high speed. It is also possible to beat the eggs with a wire whisk, but it is much more difficult.
2. Add the Marsala wine without stopping to mix the batch.
3. Immediately after mixing in the Marsala set the sauce pan in an other pan with simmering water or on the top of a double boiler. You should never stop mixing from when you start until it is ready.
4. Beat the sauce for about 10 minutes while holding the saucepan in the water. Remember, the water doesn't have to boil.
5. The zabaione is ready when the cream has doubled in volume and it is fluffy and soft.
6. Serve it immediately accompanied with dry biscuits.
Try zabaione with your cake.

martha -- If you haven't used the extra egg yolks yet . Why don't you freeze them for later use. ( 11 yolks 1 table spoon sugar small pinch salt 1 table spoon water ) stir togeather. pour into ice cube tray making 11 cubes. When you need egg yolks in the future use 1 cube for each yolk needed.
