Answers:
This turned out really good and wasn't hard at all. This is only for 2 so i would double all the ingredients. Also if you don't like marshmallows take that out and put on banana and toffee sauce, or exotic fruit, or lemon curd, or.... I could go on forever!

Ingredients
For the base
4 chocolate cookies, crumbled
For the filling
150ml/5fl oz double cream whipped
125g/4oz greek yogurt
2 tbsp soft brown sugar
For the topping
2 large handfuls of mini marshmallows

Method
1. Place the crumbled cookies into a chefs' ring.
2. In a bowl mix the double cream with the yoghurt and brown sugar.
3. Place the creamy mixture on top of the cookies and flatten out.
4. Blowtorch the sides to melt the cheesecake, and gently release the cake ring.
5. Place the marshmallows on top of the cheesecake. Blowtorch the marshmallows until just melting and serve.

Lemon Cheesecake Recipe

1 cup finely crushed Vanilla Wafers 3 Tbsp sugar
3 Tbsp butter or margarine, melted 4 eggs divided
3 pkg (8 oz. each) PHILADELPHIA Cream Cheese, softened
1 cup sugar 3 Tbsp flour
1 Tbsp grated lemon peel 2 Tbsp lemon juice
1/2 tsp vanilla 3/4 cup sugar
2 Tbsp cornstarch 1/4 cup lemon juice

Method
PREHEAT oven to 325°F if using a silver 9-inch spring form pan
(or to 300°F if using a dark non-stick 9-inch spring form pan).
Mix crumbs, 3 Tbsp. sugar and butter; press firmly onto bottom of pan. Bake 10 minutes.

SEPARATE 1 of the eggs. Cover and refrigerate egg yolk for later use. Set egg white aside. Beat cream cheese, 1 cup sugar, flour, lemon peel, 2 Tbsp. juice and vanilla in large bowl with electric mixer on medium speed until well blended. Add egg white and remaining 3 whole eggs, one at a time, mixing on low speed after each addition just until blended. Pour over crust.

Bake for 50 to 55 minutes or until center is almost set.
Run knife or metal spatula around rim of pan to loosen cake; cool before removing rim of pan.
Refrigerate 4 hours or overnight.

MIX 3/4 cup sugar and cornstarch in medium saucepan, gradually stir in 1/2 cup water and 1/4 cup juice until well blended.
Bring just to boil on medium heat, stirring constantly,
cook and stir until clear and thickened.
Beat reserved egg yolk lightly with fork.
Stir in 2 Tbsp. of the hot cornstarch mixture.
Return to remaining cornstarch mixture in saucepan,
mix until well blended.
Cook 1 minute or until thickened, stirring constantly.
Cool slightly. Spoon topping over cheesecake,
refrigerate until set.

Hope this helps

Chantal's New York Cheesecake
INGREDIENTS

* 15 graham crackers, crushed
* 2 tablespoons butter, melted
*
* 4 (8 ounce) packages cream cheese
* 1 1/2 cups white sugar
* 3/4 cup milk
* 4 eggs
* 1 cup sour cream
* 1 tablespoon vanilla extract
* 1/4 cup all-purpose flour

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch springform pan.
2. In a medium bowl, mix graham cracker crumbs with melted butter. Press onto bottom of springform pan.
3. In a large bowl, mix cream cheese with sugar until smooth. Blend in milk, and then mix in the eggs one at a time, mixing just enough to incorporate. Mix in sour cream, vanilla and flour until smooth. Pour filling into prepared crust.
4. Bake in preheated oven for 1 hour. Turn the oven off, and let cake cool in oven with the door closed for 5 to 6 hours; this prevents cracking. Chill in refrigerator until serving.

good one here

ingredients
1 crumb-crust recipe, made with finely ground graham crackers
5 (8-oz) packages cream cheese, softened
1 3/4 cups sugar
3 tablespoons all-purpose flour
Finely grated zest of 1 orange
Finely grated zest of 1 lemon
5 large eggs
2 large egg yolks
1/2 teaspoon vanilla preparation
Make crumb crust as directed in separate recipe. Preheat oven to 550°F.
Beat together cream cheese, sugar, flour, and zests with an electric mixer until smooth. Add eggs and yolks, 1 at a time, then vanilla, beating on low speed until each ingredient is incorporated and scraping down bowl between additions.

Put springform pan with crust in a shallow baking pan. Pour filling into crust (springform pan will be completely full) and bake in baking pan (to catch drips) in middle of oven 12 minutes, or until puffed. Reduce temperature to 200°F and continue baking until cake is mostly firm (center will still be slightly wobbly when pan is gently shaken), about 1 hour more.

Run a knife around top edge of cake to loosen and cool completely in springform pan on a rack. Chill cake, loosely covered, at least 6 hours. Remove side of pan and transfer cake to a plate. Bring to room temperature before serving.

Cooks' note:
@?eesecake keeps, covered and chilled, 2 weeks.

New York Baked Cheesecake.

Hi Annie, does your dad like mint and chocolate? If so, have him go to the Andes Mints website and get the recipe for their cheesecake. I made it for Christmas and it was awesome. It has an Oreo crust and you put the Andes mints in the cheesecake and also on top as a chocolate mint glaze.
