Just make a punch style spritzer...get a punch bowl...pour in sangria and add in ginger ale, squirt or seven up to it according to your taste...then throw in a can of mandarin oranges (drained) and some sliced strawberries...Have fun!

Rose Sangria

1. 1 quart white grape juice
2. 2 cups cranberry-raspberry juice
3. 1/2 cup pear liqueur (Poire William) or raspberry liqueur (framboise)
4. 2 apples, preferably Pink Lady
5. 2 pears, preferably Forelle
6. 1 navel orange - trimmed, quartered lengthwise and sliced crosswise 1/3 inch thick
7. 2 cups seedless black grapes
8. 1 (1.5 liter) bottle chilled rose wine
9. Ice cubes, for serving

2. Cooking Directions
1. In a 3-quart bowl, combine the white grape juice, cranberry-raspberry juice and pear liqueur.
2. Quarter and core the apples and pears, then thinly slice them and add to the bowl along with the orange and grapes. Cover the fruit and chill for at least 2 hours and up to overnight.
3. Transfer the fruit and juices to a 5-quart punch bowl. Add the wine and serve the sangria over ice cubes in tumblers.

traditional sangria


2 bottles chilled dry red wine
1 cup brandy
1 cup orange juice
1/4 cup superfine granulated sugar
2 oranges, cut into thin rounds
2 Meyer lemons, cut into thin rounds
3 Key limes, cut into thin rounds
2 apples, cored and cut into 1/2-inch chunks
2 cups cold club soda

In a large pot or bowl, combine the wine, brandy, orange juice, and sugar and stir until the sugar dissolves. Add the orange, lemon, and lime slices, the apples and refrigerate until well chilled, about 1 hour. Remove from the refrigerator and add the soda. Serve in glasses over ice.

This is an authentic version of the popular wine drink. You can add any fruit that you want, but I find that apples and pears absorb all the rum. This one is not diluted with carbonated beverages. I have much success with red Burgundy wine and white rum, though spiced rum is nice too."

1 lime
1 orange
1 1/2 cups rum
1/2 cup white sugar
1 (750 milliliter) bottle dry red wine
1 cup orange juice
DIRECTIONS
Have the fruit, rum, wine, and orange juice well chilled. Slice the lemon, lime and orange into thin rounds and place in a large glass pitcher. Pour in the rum and sugar. Chill in refrigerator for 2 hours to develop the flavors.
When ready to serve, crush the fruit lightly with a wooden spoon and stir in the wine and orange juice. Adjust sweetness to taste.


Grilled Rosemary Shrimp Skewers with Sea Salt

"Enjoy Phase One with this great shrimp dish. Infused with the classic Mediterranean herbs rosemary and thyme, these quick-cooking skewers look fabulous and taste even better. The skewers can be cooked on a ridged cast-iron grill pan, on a home grill or in the broiler. Ask the fishmonger to shell and devein the shrimp for you."

INGREDIENTS
16 extra-large shrimp, shelled and deveined
2 tablespoons olive oil
2 teaspoons fresh thyme leaves
16 4-inch rosemary skewers (see below)
Sea salt
DIRECTIONS
In a medium non-metal bowl, combine shrimp, oil and thyme. Cover and refrigerate for 2 hours or up to 6 hours.
For rosemary skewers: Pull half of the leaves off each stalk, so that leaves remain on one end. Sharpen the other end into a point with a paring knife. Thread shrimp onto the pointed end of each skewer, as shown in photo.
Heat a grill, grill pan, or broiler. Cook shrimp about 3 minutes per side, until they turn opaque and start to curl slightly. Place on serving platter; sprinkle with sea salt.

For 1 16oz glass, fill with ice, fill 1/3 ways with brandy, 1/3 ways with red wine (I like Merlot), and the other 1/3 with Ocean spray Cranberry and Pomegranate juice, add fresh fruit.

If your making a pitcher you'll have to adjust the amounts but this is very good and is clear and not cloudy like when you use a thicker (orange based) juice. It gives it better visual appeal.

Peach Sangria:

3 1/2 cups

1 (750 ml) bottle chablis or other dry white wine, chilled
1/4 cup peach schnapps
3 tablespoons sugar
1 fresh peach, peeled and thinly sliced
1 orange, thinly sliced
1 lemon, thinly sliced

1. Combine first three ingredients in a large pitcher,stirring until sugar is desolved.
2. Add fruit.
3. Cover and chill at least an hour.
4. Serve over ice adding several pieces of fruit to each glass.
