Yes, papaya has a compound called papain that is a very effective meat tenderizer. If I remember correctly, papain is a key ingredient in products like Adolf's Meat Tenderizer. Some of the low end steak places (Sizzler) and even grocery stores use this stuff to assure tender (more mushy) meat. You can pretty much tell when its been used, because even though the meat is tender, it just doesn't have the right texture. The muscle is being broken down by the enzymes in papain.

Once as a caterer, one of our staff wanted to get an early start on assembling a salad the evening before an early party taking place the next day. It was a pasta salad containing smoked chicken and papaya. The next morning we had smoked chicken mush and pasta salad. Pretty gross. Yeah we did make it a new one.

Yes, it has the enzymes to break down the protein. don't marinate it too long....
