does any one have any tips for cooking pork, so that it's not chewy?

when you say pork loin, i am assuming you bought a long, cylindrical peice of pork that is at least a few inches thick. i would recommend buying a meat thermometer, so that you can stop cooking your pork as soon as it reaches an internal temperature of 145 (at least), then let it sit for about 10 minutes without cutting it open. Now, all meat IS chewy, so by chewy i assume you mean rubbery and overcooked. but this should help.
You don't say what cut of port you're cooking. I've NEVER had any form of pork be chewy. But we'd need to know what cut it is you're cooking, as there are different ways to cook different cuts.
fry it with bread crumbs and fry in a pan and or bake the pork chops
What kind of cut of pork are we talking about?
