Is it OK to cook eggplant/aubergine that has turned brown?

I just cut one and it is brown inside. I need it to add to a curry, so it will soak up a lot of sauce - but does it taste bad once it has turned brown or should it be OK in a curry?

No, definitely do not cook with it. When eggplant turns brown, it is from a chemical reaction. The normal sugars in the eggplant turn into proprionic acid. This acid can cause ulcers and inflame the intestinal membrane. I would recommend getting a new one. No cooking will alleviate this reaction. Hope this helps.

not good get you some more has to be white on the inside once a egg plant goes brown it's not good to use.
